Healthy Cauliflower Fried “Rice” (Eat Yourself Skinny)
I always thought that the idea of cauliflower "rice" was interesting, but this is a wonderful recipe & a great way to incorporate veggies into your life. Rice made out of cauliflower totally works! Plus, who doesn't drool over Chinese comfort food? So happy there's a healthy version of it.
My only changes to this recipe are to:
1. Use toasted sesame seed oil for a richer flavor.
2. Double the amount of the oil so I can cook in my carbon steel pan without the egg sticking. (A NYC-sized apt means no special use cookware.)
3. Buy pre-made cauliflower rice from Whole Foods so I can make the whole dish insanely fast.
